What he'd meant is that Gabriel seems to know how to hit all the right marks to pass himself off as human like Zachariah, and he's not sure if that's a good sign or an even scarier sign than dealing with someone like Castiel, who doesn't even try. But saying anything more would require stepping on the landmine that is discussing an angel's "feelings" and Adam's not so stupid as to stick his neck out like that to keep asking questions.
