Kaneki picks up Panne's scent as well. It stands out to him among all of the clearly-human scents in the air and it intrigues him. He's seen Panne through the glass once or twice and he doesn't quite know what she is, but he thinks she might be edible. Other ghouls are, after all. Finding out would be worth the hunt--he's not a gourmet like some in the memories he inherited from the Real Kaneki, but he doesn't mind a challenge, especially if the payoff is good.
As he follows that smell to its source, the smell of flesh and gore that he carries with him grows stronger. Of course, he's not covered in it--even his clothes aren't stained--but he hopes to be soon.
